Today Iβm sharing a few of my favorite healthy, fresh, and easy summer recipes to make your outdoor meals feel extra delicious (and nourishing!).

A refreshing, hydrating dish thatβs perfect for hot days.
Ingredients:
2 cups diced watermelon 1 cup sliced cucumber 1/3 cup crumbled feta cheese (optional) Fresh mint leaves, chopped Juice of 1 lime Drizzle of olive oil Pinch of sea salt
How to make:
Combine everything in a big bowl, toss gently, and serve chilled.
π―Β 2οΈβ£ Chickpea & Veggie Wraps
A colorful, protein-packed wrap thatβs easy to take anywhere.
Ingredients:
Whole wheat or spinach wraps 1 can chickpeas (rinsed and lightly mashed) 1/2 cup diced bell peppers 1/2 cup shredded carrots A handful of spinach or mixed greens Hummus or avocado spread Lemon juice, salt & pepper
How to make:
Spread hummus on the wrap, layer with veggies and chickpeas, season, roll tightly, and slice.
π’Β 3οΈβ£ Grilled Veggie Skewers with Herb Yogurt Dip
Perfect for a backyard grill night or a small gathering.
Ingredients:
Zucchini, bell peppers, mushrooms, cherry tomatoes, red onion Olive oil, salt, pepper, garlic powder
Dip:
1 cup plain Greek yogurt Fresh chopped herbs (like dill and parsley) Zest of 1 lemon Salt & pepper
How to make:
Skewer the veggies, brush with olive oil and seasonings. Grill until tender. For the dip, mix all ingredients in a bowl.
πΒ 4οΈβ£ Berry Yogurt Parfait
A sweet and light summer treat.

Ingredients:
Fresh mixed berries (strawberries, blueberries, raspberries) Coconut or Greek yogurt Granola or crushed nuts Drizzle of honey (optional)
How to make:
Layer yogurt, berries, and granola in cups or jars. Serve immediately or chill for later.
